Recipe Ingredients for Coconut Cream Tarts

1 cup shredded coconut
1 cup coconut milk
1 cup half and half
1/2 cup sugar
1/4 cup corn starch
1/2 tsp vanilla
3 tbsp butter
1/2 tsp coconut rum
4 egg yolks

Recipe Directions for Coconut Cream Tarts

  1. Combine sugar and cornstarch in heavy sauce pan. Whisk together 1/2-1/2, coconut milk, and egg yolks. Gradually whisk egg mixture into sugar mixture, bring to a boil, whisking constantly. Boil 1 minute.

  2. Stir in butter, 1 cup coconut, vanilla, and rum. cover with plastic wrap, placing wrap directly on filling in pan; let stand 30 minutes. Spoon into tart shells or one 9" pie crust.
