in place of the flour, shortening salt and ice water, use a 9 inch pie shell

Recipe Ingredients for Coconut Cream Pie

2 1/2 cups milk
3 eggs
1/3 cup sugar
1/4 tsp salt
3 tablespoons cornstarch
6 tablespoons sugar
1/2 teaspoon vanilla
1/4 teaspoon cream of tartar
1/3 cup shredded coconut
1 cup flour
1/2 teaspoon salt
1/3 cup shortening
3 tablespoons ice water

Recipe Directions for Coconut Cream Pie

Prick pie shell with a fork and prebake the shell. Combine sugar, cornstarch 1/4 tsp salt. Stir in milk. cook over medium heat, stirring constantly until thick. Beat egg yolks with some of the hot pudding and then add to the main pudding, wisking to keep from clumping the yolks. Cook one minute longer. Stir in most of the coconut, reserving just enough to sprinkle on the meringue. Beat the whites a little with electric mixer. After large bubbles form, sprinkle in the cream of tartar and then beat well until stiff peaks form. Slowly add the 6 Tablespoons of sugar one tablespoon at a time while mixer is running, and then the vanilla. Once combined, place the still hot pudding in the baked shell. Seal the meringue to the crust and make pretty peaks as desired. Sprinkle with remaining coconut. Bake at 350 degrees 12-15 minutes, watching carefully so as not to burn the meringue. Chill before serving.
