Old fashioned coconut cream pie filling

Recipe Ingredients for Coconut cream filling

2/3 cup sugar
3 tablespoons corn starch
1/2 teaspoon salt
3 cups 2% milk
3 egg yolks
1 tablespoon margarine
1 1/2 teaspoons vanilla
3/4 cup coconut

Recipe Directions for Coconut cream filling

  1. Mix sugar cornstarch and salt in microwave safe bowl.

  2. Stir in 1/2 of milk.

  3. Bring to a boil.

  4. in separate bowl slightly beat egg yolks and then stir in the rest of the cold milk.

  5. Slowly add the hot mixture into that while stirring constantly.

  6. Place back in microwave bowl and heat until boiled and thickened stopping to stir every minute or two.

  7. Once it is thickened add coconut, margarine and flavoring.

  8. pour into cooled pie shell and cover with meringue immediately and place in oven at 400 till lightly browned.

  9. Cool away from drafts and then chill in the fridge before serving.
