A nice summer salad with an asian twist.

Recipe Ingredients for Coconut Crab Cake Salad with Honey Orange Dressing

8 oz lump crab meat
1 egg
1/2 cup Shredded Coconut
2 teaspoons ginger, freshly grated
2 teaspoons lemon zest
1 tablespoon lemon juice
1/2 teaspoon sea salt
1 tablespoon sesame oil
2 Oranges
1 tablespoon lemon juice
1 tablespoons honey
1 teaspoon ginger
1/2 avocado, diced
3 cups romaine lettuce

Recipe Directions for Coconut Crab Cake Salad with Honey Orange Dressing

  1. Heat medium skillet on medium hi heat.

  2. In a bowl combine crab meat, egg, coconut, ginger, lemon zest, lemon juice & sea salt. Form into 8 crab cakes.

  3. Pour sesame oil in skillet. When it begins to smoke, turn the heat to medium and drop in the crab cakes. Cook about 2 - 3 minutes per side until nicely browned.

  4. Meanwhile, cut 2 oranges in quarters and squeeze juice into sauce pan. Drop in oranges. Add lemon juice, homey & ginger. Boil until thickened and reduced slightly. (About 5 minutes)

  5. Assemble romaine leaves on 4 plates, top with 2 crab cakes, sprinkle diced avocado on top. Pour dressing over top. Serve and enjoy.

  6. ** While this recipe is not lo fat, it is lo calorie. The fats it does contain are healthy fats which are more easily metabolized by your body.

  7. ** For a lower fat version.... substitute coconut for bread crumbs; replace avocado with tomatoes; bake in oven at 375 for 10 minutes, turn and continue baking another 10 minutes. (Check to ensure they don't over-brown.)
