Recipe Ingredients for Coconut Covered Orange White Chocolate Cupcakes (low cal - no oil)

1 cup sugar
2/3 cup applesauce
2 eggs
1 cup orange juice
3 cups all-purpose flour
1 tablespoon baking powder
1 teaspoon baking soda
3/4 teaspoon salt
11 ounce mandarin oranges
1 cup white chocolate chips
1 cup flaked coconut
1/3 cup sugar
2 tablespoons butter, melted

Recipe Directions for Coconut Covered Orange White Chocolate Cupcakes (low cal - no oil)

  1. # Preheat oven to 375. Mix sugar, oil, eggs, and juice together in one bowl; mix flour, baking powder/soda, and salt in another bowl. Combine wet and dry ingredients.

  2. # Fold oranges and chips into mixture.

  3. # Pour into cupcake pan until 3/4 full.

  4. # Combine remaining ingredients and sprinkle over cupcakes until covered.

  5. # Bake for 15-20min, or until golden brown.
