Recipe Ingredients for Coconut Couscous

1/2 c couscous, dry
1/4 c water
1/4 c coconut water
1/2 c radish sprouts
1/8 c golden raisins
1/8 c cilantro, chopped
1/8 c coconut flesh, shredded

Recipe Directions for Coconut Couscous

  1. Combine water, coconut, and raisins in a microwave save bowl and heat to boiling.

  2. Carefully pour liquid and raisins over couscous (be sure its in a bowl large enough for it to expand) and cover with plastic wrap. Allow to sit 5 minutes

  3. Stir in remaining ingredients and season to taste with salt and pepper, if desired.
