Flourless, not too sweet, can be eaten "raw"!

Recipe Ingredients for Coconut Cocoa "Cookies"

1/2 c steel cut oats
7 raw almonds
120 g (7) Medjool dates, pitted
1/4 t salt
2 T cocoa powder
2 T coconut oil
21 g (3T) coconut flour
1/2 t vanilla extract
1 T honey
1/4 c water
1/2 c raisins

Recipe Directions for Coconut Cocoa "Cookies"

  1. Soak the oats, almonds and dates overnight individually in a half cup fresh water each.

  2. Drain them the next morning and put in food processor with the salt, cocoa, coconut oil, coconut flour, vanilla extract, honey and water.

  3. Process for about a minute, transfer contents to bowl, fold in raisins.

  4. Divide dough into 15 equal parts and roll into ball. Can eat like this or put onto cookie sheet lined with parchment and press gently to flatten.

  5. If you want to dehydrate them, place in dehydrator at 105 degrees for 3 hours or pop them in the oven at 350 degrees for about 12 minutes.
