Recipe Ingredients for Coconut Chocolate Chip Cakies

2 c whole wheat flour
1/2 c Sugar in the Raw
1 t baking powder
1/2 t baking soda
1 t salt
3 t cinnamon
3/4 c shredded coconut
3 T Syrups, Table Blends, Corn, Refiner, And Sugar
1 1/2 t Egg Replacer
1 c rice milk
3/4 c chocolate chips
1 t vanilla extract

Recipe Directions for Coconut Chocolate Chip Cakies

  1. Preheat over to 350F.

  2. Thoroughly mix together raw sugar and about 1/2 cup of rice milk.

  3. Combine flour, baking powder and soda, salt, 1 t cinnamon, and coconut in a large mixing bowl.

  4. Prepare the equivalent of one egg replacer and mix into sugar/milk mixture along with the vanilla extract. Once all is incorporated, add to dry mixture. Stir and slowly add the rest of the rice milk, using more if necessary, until a very sticky batter/dough is formed.

  5. Fold in chocolate chips.

  6. Mix refined sugar and the rest of the cinnamon in a shallow dish. Form 1 1/2 inch balls from the dough, roll in the sugar mixture, and place on a well-oiled cookie sheet, 1/2 an inch apart.

  7. Bake 12-15 minutes, then immediately remove cookies to a plate or cooling rack.
