Recipe Ingredients for Coconut Chili Tilapia


PUREE:
1 clove garlic
1/2 banana
1/2 cup canned black beans, rinsed and drained
1/4 cup chicken stock
1 tbsp. fresh lime juice
1 tsp. cumin
1/4 tsp. salt

TILAPIA:
1/2 carrot, shredded
1/3 cup light coconut milk
1 tsp. chili powder
1/4 tsp. salt
1 pepper, jalapeno
16 oz. tilapia fillets, skinned

Recipe Directions for Coconut Chili Tilapia

  1. To prepare puree, heat a nonstick skillet and brown garlic for 2 minutes. Add banana and cook two minutes, stirring occasionally. Stir in beans, 1/8 cup stock, lime juice, cumin and salt. Cover and simmer for 5 minutes. Place mixture in food processor with the remaining 1/8 cup of stock. Puree until smooth.

  2. To prepare tilapia, combine carrot, milk, chili powder, salt and jalapenos in a large nonstick skillet over medium-high heat. Bring the mixture to a simmer. Add the fish to the pan; cover and simmer for 7 minutes or until fish flakes easily with a fork.
