Recipe Ingredients for coconut chickpea curry

46 1/2 oz chickpeas, drained and rinsed
1 lb frozen peas and carrots
1/4 lb frozen broccoli
1/4 lb frozen cauliflower
1/2 lb frozen green beans
9 cups water

Recipe Directions for coconut chickpea curry

  1. boil 9 cups veg stock

  2. add beans, frozen veggies, seasonings (curry powder, paprika, cumin, salt, pepper to taste). boil 45 mins or until veggies are tender.

  3. add 1 can unsweetened coconut milk. remove from heat, seperation is natural.

  4. makes 10 servings.
