Recipe Ingredients for Coconut Chicken Tenders with Spicy Mango Sauce

3 c coconut, flaked
2 mangoes, peeled, seeded & chopped
1 c red bell pepper, chopped
6 tbsp green onions, chopped
4 tbsp cilantro, fresh & chopped
1 salt to taste
1 Red pepper to taste
2 eggs
2 tbsp olive oil
1/4 tsp salt
24 oz chicken tenders

Recipe Directions for Coconut Chicken Tenders with Spicy Mango Sauce

  1. Preheat oven 350F.

  2. Spread coconut on large baking sheet. Bake 7 to 10 minutes. Stirring every 2 minutes. Transfer to food processor and process until finely chopped but not pasty.

  3. Increase oven temp. to 400F.

  4. Combine mango, pepper, onion and cilantro in small bowl. Season with salt & ground red pepper.

  5. Transfer 1/2 of salsa to food processor; finely chop until almost pureed. Combine with remaining salsa; set aside.

  6. Beat eggs with oil, salt and ground red pepper. Add tenders; toss to coat. Roll tenders in coconut; arrange on foil lined baking sheet.

  7. Bake 18 to 20 minutes or until no longer pink in center.

  8. Serve with mango salsa.
