Recipe Ingredients for Coconut Chicken Salad

16 oz Chicken
6 tbsp Coconut
0.25 cup Panko
0.33 cup Egg Substitute
1 dash Salt, Table
0.13 cup Rice Krispies
3 cups Mixed Baby Greens
0.75 cup, grated Carrots
1 medium whole (2-3/5" dia) Tomatoes, Red, Ripe
1 cup, chopped Broccoli
1 tbsp Olive Oil
1 tbsp Honey, Strained Or Extracted
1 serving White Vinegar
1 serving Dijon

Recipe Directions for Coconut Chicken Salad

Wisk together oil, honey, vinrgar and and mustard and set aside. Comdine cereal, panko, coconut flakes and salt in one bolt. Put egg in another bowl. Lightly season chicken with salt. Dip chicken in egg, then in the coconut mixture. Place on parchment line baking sheet. Spray lightly with oil. Bake 30 min at 375 turning halfway. Toss greens, carrots, tomato and broccoli. Heat dressing in microwave a few secound and toss with green. Cut chicken into strips and serve over greens.
