These chicken tenders become sweet and crunchy. They make a nice centerpiece for a caribbean salad.

Recipe Ingredients for Coconut Chicken

20 oz chicken tenders
3/4 cup coconut
1/2 cup flour
1/4 cup buttery spread
1/2 tsp salt
1/4 tsp pepper
2 egg whites

Recipe Directions for Coconut Chicken

  1. Preheat oven to 400 degrees.

  2. Combine all dry ingredients on a plate.

  3. In a bowl whisk egg whites.

  4. One at a time dip the chicken tenders in the egg whites and coat in the coconut mixture. Place in a 9 x 13 pan.

  5. When finished, melt the buttery spread in the microwave and evenly pour the spread over the chicken tenders.

  6. Bake for 10 minutes and turn the tenders. Bake an additional 10 - 15 minutes until chicken is done.
