Recipe Ingredients for Coconut Chicken Curry

1 1/2 c. chicken breast
14 oz. lite coconut milk
28 oz. Light & Fat Free Chicken Broth 50% Less Sodium
1 tbsp. lite soy sauce
2 tbsp. red curry paste
4 oz. whole wheat spaghetti
1 tbsp. garlic, minced
2 tbsp. ginger, grated
1 tsp. red pepper flakes
2 c. cabbage, shredded
1 c. green peppers, sliced
1 c. roasted red peppers, sliced
2 c. eggplant
1 c. mushrooms
1 c. green onions, sliced
1/2 c. red onions, sliced
1 c. carrots, sliced
1/2 c. fresh basil
1 tsp. olive oil

Recipe Directions for Coconut Chicken Curry

  1. Heat oil in a large pot over medium. Add garlic, ginger and red pepper flakes.

  2. Sautee carrots, red onions, and green peppers. Add in eggplant, mushrooms, red peppers, and shredded cabbage.

  3. Add coconut milk and curry paste, and mix until curry paste is distributed. Add chicken broth and raw chicken. Cover and simmer until chicken is cooked (about 10 minutes)

  4. Remove chicken breast and set aside. Bring pot to boil and add spaghetti (if you need more liquid, add some water or broth). Boil until spaghetti is al dente (about 6-8 minutes)

  5. Cut up chicken into bite size pieces. Reduce to simmer and add chicken, green onions, and basil.

  6. Serve.
