All veggie curry, like a soup, not a stew

Recipe Ingredients for Coconut Cauliflower Curry

6 cups cauliflower
1 cup onion
2 cups carrots
1 cup raisins
2 cups coconut milk
5 potatoes
8 cups chicken broth
1 1/2 cups mushrooms
3 tbsp curry powder

Recipe Directions for Coconut Cauliflower Curry

  1. Chop all veggies in bite sized pieces

  2. Saute onions and mushrooms over med-high heat

  3. Add spices and saute 1 more minute

  4. Add broth and the rest of veggies

  5. Simmer for 20-25 minutes until all carrots and potatoes are tender

  6. Remove from heat and stir in coconut milk
