Delicious moist coconut pineapple carrot cake. Normal recipe calls for 1 cup oil (instead of the 1/2 cup oil and 1/2 cup applesauce) and 2 cups of sugar.

Recipe Ingredients for Coconut Carrot Cake

1 cup flour
1 cup white whole wheat flour
1/2 cup oil
1/2 cup applesauce
3/4 cup egg beaters
1 3/4 cup sugar
8 oz Pineapple Crushed In Unsweetened Pineapple Juice
2 cups grated carrots
1 1/3 cups flaked coconut
1/2 cup raisins

Recipe Directions for Coconut Carrot Cake

  1. Beat oil, egg beaters, sugar and applesauce. Add flours, 2 1/2 tsp baking soda, 2 tsp cinnamon, 1 tsp salt and mix. Mix in pineapple with juice, carrots, coconut and raisins. Add chopped nuts if desired. Bake in greased 9 X 13in pan at 350 degrees for 50-60 mins.

  2. Top with coconut cream frosting if desired.
