Recipe Ingredients for Coconut cake

3 eggs
3 tsp baking powder
50 grams
175 grams
175 grams
175 grams
150 grams
75 grams

Recipe Directions for Coconut cake

  1. cream sugar and butter

  2. add eggs and flour and combine until smooth

  3. stir in dessicated cocount and 3 tbsps of the coconut milk

  4. pour into a greased/lined loaf tin and bake gas 4/180c for 45 minutes to 1 hour until a skewer comes out clean

  5. mix icing sugar with enough of remaining coconut milk (approx 4 tbsps?) to make icing and then smooth onto top of cooled cake. Leave to set

  6. serve & enjoy
