Gluten free extra moist coconut and banana muffins

Recipe Ingredients for Coconut and Banana Muffins

3 banana, mashed
2 eggs
100 g brown sugar
1/3 cup coconut, grated
100 g quinoa flour
1/2 cup almond meal
1/2 cup buckwheat flour
100 ml coconut oil
1/4 cup light coconut milk
1/2 tsp baking soda
1 tsp baking powder

Recipe Directions for Coconut and Banana Muffins

  1. In a bowl, mash the bananas with a fork; set aside. Preheat the oven at 350 F. Fill a muffin mold with paper cases; set aside.

  2. In the bowl of a stand mixer, beat the eggs with the sugar until light and fluffy.

  3. Add the oil and mix well. Add the coconut milk and mix.

  4. In a bowl, combine the flours, grated coconut, baking powder, baking soda and salt.

  5. Add the dry ingredients to the wet ones and mix until just combined.

  6. Add the bananas and mix gently.

  7. Fill the muffins cases. Sprinkle with more grated coconut and bake for 25 minutes.
