Recipe Ingredients for Cocoa Lava Kisses

3 egg whites
1/8 teaspoon salt
2 teaspoons water
1 teaspoon vanilla
3 tablespoons cocoa powder
1 cup sugar

Recipe Directions for Cocoa Lava Kisses

  1. Preheat oven to 250 degrees. Line cookie sheets with parchment paper.

  2. Place egg whites and salt in medium bowl.

  3. Whip with an electric mixer until soft peaks form.

  4. Gradually add 1/2 cup of the sugar to egg whites

  5. while constantly whipping.

  6. Combine water and vanilla in a cup.

  7. Add to mix, a few drops at a time, alternating with the remaining

  8. 1/2 cup sugar while constantly whipping.

  9. Flake the cocoa with a fork to break clumps.

  10. Sift if necessary. Fold completely into mix.

  11. Place bite-sized rounded teaspoons of

  12. batter onto parchment

  13. paper-lined sheets.

  14. Bake approximately 30 minutes.

  15. They will be dry on the outside, but moist

  16. and lava-like on the inside.

  17. They will retain their shape.

  18. (If dry like styrofoam, they are overbaked.)

  19. While kisses are still hot, remove from

  20. paper and place on wire rack so

  21. they will not stick.

  22. After cooling, store kisses in an airtight container.
