Actual name Chocolate Mini-Meringues. I got this recipe from my mother, who got it from a low-cal recipe book. Each one of these mini-merigues is about 55 calories, about 10 more with whipped cream and fresh fruit on top.

Recipe Ingredients for Cocoa Clouds

3 egg whites
1/4 tsp cream of tartar
3/4 cup sugar
2 tbsp cocoa

Recipe Directions for Cocoa Clouds

  1. Heat oven to 275 F.

  2. Cover 2 medium sized baking sheets with aluminum foil and set aside.

  3. Beat egg whites and sream of tartar in small mixing bowl with electric beater until foamy. Beat in sugar 1 Tbsp at a time; beat until stiff and glossy. Do NOT underbeat. Sprinkle cocoa on mixture and gently fold in.

  4. When thoroughly blended, drop by Tablespoonfuls onto baking sheets about 1-1/2 inches apart. If desired, make small indentations in each meringue with a spoon for whipped topping and fresh fruit. Bake 10 minutes, turn off oven. Leave meringues in oven with the door closed for 1 hour. Remove from oven, finish cooling away from draft.

  5. If desired, add a spoonful of whipped topping on top of each meringue, and one piece fresh fruit. Enjoy.
