Recipe Ingredients for Coco-nut oil Muffins

1 1/2 cups flour
1 cup oatmeal
1/4 cup sugar
1/4 cup splenda no calorie
1 tablespoon baking powder
1/2 cup raisins
1 cup skim milk
1/4 cup coconut oil
1 egg
1 teaspoon vanilla
1 teaspoon cinnamon

Recipe Directions for Coco-nut oil Muffins

  1. Mix dry ingredients and raisin in large bowl.

  2. Melt coconut oil, warm milk, and mix in small bowl.

  3. Lightly beat egg and add to wet mixture with vanilla and cinnamon.

  4. Add wet mixture to dry ingredients and stir until all is moistened.

  5. Bake at 350 for 18-20 minutes.
