1/2 cup unbleached all-purpose flour
1/4 teaspoon baking powder
1/4 teaspoon fine sea salt
1 cup rolled oats
1/2 cup light brown sugar, lightly packed
37 grams coconut, unsweetened, shredded
1/2 cup bittersweet or semisweet chocolate chips
5 tablespoons unsalted butter, melted and cooled to room temperature
1 large egg, lightly beaten
1/4 teaspoon vanilla extract

Recipe Directions for Cocnut-Oatmeal Bars with Chocolate Chips

  1. Instructions: Preheat the oven to 350. Lightly oil and 8-inch square baking pan and set aside.

  2. Sift the flour, baking powder, and salt into a mixing bowl. Stir in the oats, brown sugar, coconut, and chocolate chips. Stir together the melted butter, egg, and vanilla, then add to the flour mixture and stir until just blended. Avoid mixing more than needed. Transfer to the prepared pan and level the surface.

  3. Bake until slightly risen, golden, and just firm to the touch, about 25 minutes. Put the pan on a rack and let cool before cutting into triangular or rectangular bars or squares.
