Another tranditional bread from Hong Kong, which contains no cocktail.

Recipe Ingredients for Cocktail Buns

14 g Bread flour (for "water roux starter")
70 ml Water (for "water roux starter")
285 g Bread flour (for dough)
42 g Sugar (for dough)
1/2 tsp salt (for dough)
6 g dry yeast (for dough)
30 g Egg (for dough)
85 ml milk, warmed (for dough)
22 g Butter (for dough)
60 g Butter (for filling)
30 g dried milk (for filling)
3 tbsp Sugar (for filling)
20 g Coconut Meat, Dried (Desiccated), Sweetened, Shredded (for filling)
30 g Shortening (for topping)
20 g Butter (for topping)
40 g Icing sugar (for topping)
40 g Cake flour (for topping)
1/2 Egg (for topping)
1/4 tsp Salt (for topping)
1 tsp sesame seeds (for topping)

Recipe Directions for Cocktail Buns

  1. To make the "water roux starter", mix the water and the flour until well blended and lump free in a bowl. Place it on the gas stove and warm it up over the medium heat to reach 65C/150F for 2-3 minutes. Cover loosely with plastic wrap and store in the refrigerator. Let it stand at room temperature before using it.

  2. To make the dough, add dough ingredients in a mixing bowl. Mix with dough hook at slow speed for 1 minute. Change to the medium speed, and continue to mix on slow speed for 3 minutes on medium speed until a dough is form. Add butter gradually and mix for approx. 5 minutes on medium speed until gluten is fully developed, i. e. elastic, smooth, non-sticky and leave from sides of mixing bowl.

  3. Ferment the dough in a lightly greased plastic bag for 1 hour, Leave in a warm place until dough is double in volume. Punch the dough down to release gases produced in the fermenting process. Divide dough into 12 even portions and round up. Rest for 10 minutes.

  4. To make the filling, beat butter and sugar of the filling ingredients until creamy, blend in dried milk and coconut shreds.

  5. To make the topping, mix 2 kinds grease from the topping and then sift in the icing sugar. Combine well. Gradually add in egg and salt. Beat until well-combined. Sift cake flour into the mixture. Blend. Place the whole mixture in a pastry bag.

  6. Press each portion into a round and place some filling in the middle of dough, seal the edge and shape each into the long shaped bun. Pipe the topping and drizzle the top with sesame seeds. Bake at 175C/350F for about 15 minutes.
