Recipe Ingredients for Cock-a-Leekie Soup

1 cup sliced parsnips, about 2
2 quarts chicken broth, salt free
3 celery stalks, sliced
1/2 cup celery leaves, finely chopped
2 1/2 lb chicken
2 1/2 lbs leeks
1/2 c pearl barley
1 1/2 tsp curry powder
1 tsp ground allspice
1/2 tsp salt
12 pitted prunes, halved
2 tsp Worcestershire sauce
1/4 cup parsley, finely chopped

Recipe Directions for Cock-a-Leekie Soup

  1. Wash and slice one parsnip and celery and celery tops.

  2. Combine them with a whole chicken, 2 quarts of water, and one bay leaf. Simmer for about 45 minutes.

  3. Remove the chicken from the broth and the meat from the bone and skin.

  4. Strain the broth and discard the vegetables. Refrigerate the broth and discard the fat.

  5. Dice the other parsnip, trim and wash the leeks. Half length-wise and cut one inch slices.

  6. Heat the broth, add the vegetables, barley, herbs and spices. Simmer until the barley is tender and the leeks are very soft.

  7. Cut the chicken in small pieces, cut the prunes in half and them them to the soup along with the Worcestershire sauce. Simmer three minutes and serve.
