Lite version of cobb salad- no bacon, but still yummy!

Recipe Ingredients for Cobb salad

1 c. romaine lettuce
1/8 c. avacado
1 tbs. chopped red onion
1/2 hard boiled egg, chopped
1 oz blue cheese
2 oz boiled chicken breast, boneless, skinless
1/2 cup tomato, diced
1/2 cup cucumber, diced
1 tsp. extra virgin olive oil
1 tsp dijon mustard
1 tsp lemon juice

Recipe Directions for Cobb salad

  1. chop everything, incl lettuce

  2. Whisk liquid ingredients together

  3. toss and enjoy!!

  4. You could also sub feta for blue cheese, or red leaf for romaine lettuce
