From Donna-Marie Pye's "300 Slow Cooker Favourites". Thanks go to my neighbour Caroline Wolff for passing along her favourite family slow cooker recipes. Everyone loves a clubhouse sandwich, so this combination will please kids and parents alike.

Recipe Ingredients for Clubhouse Chicken

32 ounce boneless skinless chicken thighs
1 tbsp Dijon mustard
80 g of Black Forest ham, halved
8 slices Swiss cheese
1 tsp dried thyme
1/2 tsp paprika
284 ml condensed cream of mushroom soup, undiluted
1/2 cup evaporated milk
48 g bacon, cooked and crumbled

Recipe Directions for Clubhouse Chicken

  1. Lay chicken things, smooth side down, between two pieces of waxed paper and pound with a mallet until 1/4 inch (5 mm) thick. Spread inside of each thigh with mustard. Place a piece of ham on each thigh. Place a slice of cheese on top of ham. Roll up chicken and secure with a toothpick.

  2. Lay chicken rolls in slow cooker stoneware. Sprinkle with thyme and paprika.

  3. In a bowl, whisk together soup and milk and pour over chicken.

  4. Cover and cook on Low for 5 to 6 hours, or until juices run clear when chicken is pierced with a fork.

  5. Using a slotted spoon, transfer chicken to a plate and discard tooth picks. Whisk sauce in slow cooker until blended and poon sauce over each serving. Sprinkle with crumbled bacon.
