Lovely cake made with almond flour. Grind your own or find it a Trader Joe's. You can use any citrus fruit or combine as you like.

Recipe Ingredients for Clementine Cake

16 oz clementines (about 5 of them)
6 large eggs
3/4 cup sugar (or a cup if you like sweeter)
2 1/3 cups ground almonds (almond flour)
1 tsp baking powder

Recipe Directions for Clementine Cake

  1. Boil Clementines in their skins for 2 hours

  2. Drain and cool, cut in half and remove the seeds

  3. Process (skin and fruit) in a food processor or chop finely by hand

  4. pre-heat oven to 375

  5. butter and line an eight inch springform pan with parchment paper

  6. beat the eggs. Add sugar, almond flour, and baking powder, mix well

  7. add the chopped clementines, mix well

  8. pour mixture into the prepared pan and bake for one hour

  9. cover the top with foil after 30-to 40 minutes to prevent top from burning

  10. let cool in the pan
