My own cleaned up version of a berry loaf cake from the Crazy Plates cookbook... delicious!

Recipe Ingredients for Cleaned up Berry Maniloaf

3 1/2 cups spelt flour
3/4 cups sugar
4 tsps baking powder
2 tsps baking soda
1 tsp salt
3 tbsp. flax seed meal
2 cups yogurt
1/2 cup applesauce
2 tbsp. oil
2 eggs
4 egg whites
2 cups raspberries

Recipe Directions for Cleaned up Berry Maniloaf

  1. Preheat oven to 350. Spray two 9x5 loaf pans (or 3 small disposables) with cooking spray and set aside.

  2. In a large bowl, combine flour, sugar, baking powder, baking soda, flax seed and salt. Set aside.

  3. In a medium bowl, whisk remaining ingredients (except berries). Add wet ingredients to dry and stir just until moistened. Gently fold in raspberries.

  4. Pour batter into pans and bake for 45 minutes or until a toothpick inserted in the center of the loaf comes out clean. Cool loaves in pans for 10 minutes. Remove from pan and let cool fully before slicing. Enjoy!

  5. 2 large loaves= 10 slices each

  6. 3 smaller loaves= 7 slices each
