I make pasta at least once a week, but usually wait until the end of the week and start throwing veggies in a blender with canned tomatoes and voila, you have pasta sauce that's great and healthy! Check out more of my recipes at http://www.slim-shoppin.com

Recipe Ingredients for "Clean out the veggie drawer" pasta sauce!

28 oz. diced tomatoes
1/2 head of cauliflower
1 medium green pepper
1 medium white onion
4 cloves garlic
3 cups fresh spinach
2 carrots, peeled
1 tablespoon dried oregano
1/2 tsp. crushed red pepper flakes

Recipe Directions for "Clean out the veggie drawer" pasta sauce!

  1. Put all the ingredients into a blender and blend until smooth.

  2. Transfer to a medium pot and simmer for about 20-25 minutes on low. Salt and pepper to taste.

  3. I call this my "clean out the veggie drawer" pasta sauce. It's great because you can hide so many different veggies in there!
