2 lbs. large, frozen shrimp, tail off
14 oz. light coconut milk
1 lb. fresh green beans (not frozen)
3 green onions, diced
2 tsp. garlic powder
2 tsp. onion powder
1 tsp. paprika
4 tsp. curry powder
1/4 cup lemon juice

  1. Directions

  2. Step 1 ? Combine all ingredients in a large pot or pan, cover and bring to a boil.

  3. Step 2 ? Once you have a nice rolling boil, remove the lid and continue to cook over medium to medium-high heat.

  4. Step 3 ? It?s done cooking when the shrimp are cooked through and the green beans are cooked to your liking.

  5. Step 4 ? Wonderful served over brown rice.
