Clay Pot Chicken Rice Recipe

My first attempt at this recipe and using a clay pot

Recipe Ingredients for Clay pot chicken rice

2 tblsp soy sauce, dark
2 tblsp soy sauce, light
1 tblsp oyster sauce
2 tblsp rice wine
1 tsp ginger, grated
1 tblsp cornstarch
2 tsp brown sugar
1 1/2 tsp sesame oil
600 g skinless chicken thighs
2 cups basmati rice
92 g sausage, chinese style, sliced (2)
10 g dried mushrooms, chinese style, sliced (about 8)
2 green onions, chopped
3 leaves lettuce, chinese style, sliced (bok choy)

Recipe Directions for Clay pot chicken rice

  1. Soak dried mushrooms in warm water.

  2. Combine soy sauces, oyster sauce, rice wine, ginger, cornstarch, sesame oil and brown sugar.

  3. Remove visible fat from thighs and cut into 3 pieces or so (I didn't do this and it took longer to cook). Marinate in soy mixture (30 minutes, 1 to 2 hours or overnight).

  4. Wash rice.

  5. Place rice in claypot with soaking liquid from mushrooms and enough water or chicken stock to make up 2 1/2 to 3 cups liquid.

  6. Cover, bring to boil, reduce heat to low. Cook until water is level with the rice (about 15 minutes).

  7. Add chicken, mushrooms and sausage. Cover and cook over low heat about 15 more minutes until chicken is almost done.

  8. Add vegetables, cover and cook a few more minutes until chicken is cooked through and greens are tender (most recipes say to cook chicken until its done, add vegetables, remove from heat and let stand 10 minutes by which time the residual heat should have cooked the vegetables).
