A hearty and filling vegetarian soup.

Recipe Ingredients for Classic Vegetable Soup

1 tablespoon olive oil
1 medium onion, sliced
4 carrots, sliced
1 cup green beans, halved
8 button mushrooms, sliced
4 cups vegetable broth
3 cups water
6 red potatoes, sliced
1 salt and pepper
1/4 cup parsley, chopped

Recipe Directions for Classic Vegetable Soup

  1. Sauté onion, carrot, green beans for 3-4 minutes.

  2. Add mushrooms and cook for another 2 minutes.

  3. Add broth and water, potatoes, and season with salt & pepper.

  4. Bring to a boil, cover, reduce heat and cook at a gentle boil until the potatoes are tender. (approx. 15 minutes)

  5. Add parsley just before the potatoes are cooked.

  6. Season to taste and serve.
