Recipe Ingredients for Classic Pot Roast

4 tablespoons olive oil
2 pounds beef roast, fat trimmed
2 onions, finely chopped
3 cups frozen carrots
2 celery stalks, finely chopped
6 garlic cloves, minced
1 1/2 teaspoons fresh sage, finely chopped
1 1/2 teaspoons fresh rosemary, finely chopped
1/2 cup dry red wine
12 ounces canned plum tomatoes
1 cup beef broth
1/2 teaspoon salt
1 ground pepper to taste

Recipe Directions for Classic Pot Roast

  1. In large skillet over medium heat, heat the oil. Add the roast and brown on all sides, about 6 minutes. Transfer the roast to a plate. Add the onions, carrot, celery, garlic, rosemary, and sage to the pan. Saute, stirring constantly until the veggies are golden and fragrant, 10 min.

  2. Add the wine, turning up the heat slightly and scraping the browned bits from bottom of pan. Return the roast and cook two minutes. Stir in the tomatoes, stock, salt, and pepper; partially cover and bring to a boil. Reduce heat, cover, and simmer on low heat. Turn meat occasionally. About 2 hours or until meat is fork tender.
