From the book - "Where's Mom Now That I Need Her?" I also use this recipe to make waffles in our Mickey Mouse waffle iron (makes about 3.5 waffles). I think it would be fine for traditional waffle irons as well. Also I sometimes mix in some whole wheat flour, instead of using all AP flour. This makes approximately 8 pancakes (using a 1/4 c scoop of batter).

Recipe Ingredients for Classic Pancakes

2 eggs, well beaten
2 T oil
1/2 c 1% milk
3/4 c flour, all purpose
2 t baking soda
1/2 t salt
1/2 t sugar

Recipe Directions for Classic Pancakes

Beat together eggs, milk & oil. Sift together dry ingredients. Stir into egg mixture until all ingredients are well blended. Cook on hot greased griddle. Serve with choice of toppings.
