Classic Macaroni Salad Recipe

I love making this macaroni salad with roast or grilled chicken. I substitute broccoli for the more traditional celery because I am allergic to celery.

Recipe Ingredients for Classic Macaroni Salad

8 oz Whole Wheat Elbows
4 oz 365 Light Mayonnaise
1 serving Vinegar
1 tsp Classic Dijon Mustard
1/5 tsp Garlic Powder
1 tsp Sea Salt
1/2 cup, chopped Onions
2 oz Parsley
1 cup, chopped Broccoli

Recipe Directions for Classic Macaroni Salad

  1. Cook macaroni in salted water according to package instructions, drain and transfer to a large bowl.

  2. Meanwhile, in a medium bowl, whisk together mayonnaise, vinegar, mustard, and garlic powder. stir mixture into cooked macaroni. Fold in broccoli, onion and parsley; season to taste with salt and pepper. Serve warm or chilled. Yields about 2/3 cup per serving.
