A vegan version of the kind of cookies that Grandma used to make. Serve with a big cold glass of soy milk. This recipe is from the cookbook "How It All Vegan."

Recipe Ingredients for Classic Chocolate Chip Cookies

3/4 cup sugar(rapadura or brown sugar for some)
1/2 cup margarine, softened
6 tablespoons oil
2 tablespoons applesauce
3 tbsp water
3 tsp vanilla extract
2 1/4 cups flour (try spelt flour, but add 1/2 tsp of baking powder too)
1 tsp baking soda
1/4 tsp salt
1 cup chocolate chips

Recipe Directions for Classic Chocolate Chip Cookies

  1. Preheat oven to 375. In a medium bowl mix together flour, baking soda, (baking powder, if using spelt flour) and salt. In a larger bowl, stir together the sweetener, margarine, oil, water, and vanilla. Add this margarine mixture to the flour mixture. Mix together well. Then add in the chocolate chips.

  2. Scoop spoon sized portions onto an ungreased cookie sheet, roll between hands into balls, then slightly press onto cookie sheet with tips of fingers. Bake for 8-10 minutes or until the tops are slightly browned. Let cool before removing from the cookie sheet. This recipe makes at least 20 large, 35 medium, or at least 50 small cookies. Enjoy with a nice cold glass of soy or rice milk!
