Recipe Ingredients for Clam spaghetti

1/2 cup olive oil
1 dried red chili pepper
1 onion, large chopped
3 garlic cloves
1/2 cup fresh basil
1 tbs oregano
1/2 cup white wine
9 oz canned clams
1 tbs butter
1 lb spaghetti
1 cup parsley
1/3 lb. mushrooms
3 tbs parmesan cheese

Recipe Directions for Clam spaghetti

  1. Warm olive oil in a large cast-iron skillet. Add the dried chili pepper, onion and garlic cloves. Cook slowly for about 30 minutes or until the onions are very soft.

  2. Add to the pan the basil, oregano,salt and pepper, wine and liquid from the clams. Continue to simmer until the some of the liquid is reduced down.. Keep warm. In the meantime saute the mushrooms in a TBS of butter and then add to the mixture.

  3. Bring a kettle of water to the boil. Add a TBS of salt and 1 TBS of olive oil. Cook spaghetti until al dente

  4. As pasta is cooking, add the clams, parsley and 3 TBS of cheese to the sauce and simmer at low heat for about 5 minutes.

  5. After draining the pasta, stir into the sauce and toss. Sprinkle generously with grated parmesan and serve directly from the skillet.
