Recipe Ingredients for Clam Sauce

3 lbs clams
2 cups water
1/2 cup lemon juice
1/8 cup chopped parsley
1 stick of unsalted butter
4 cloves of minced garlic
2 tablespoons flour
1 pint of Heavy Cream
1/4 cup grated parmesan cheese

Recipe Directions for Clam Sauce

  1. Rinse clams and discard any shells that are open.

  2. Remove the clams from the steamer pot and take the clams out from the shells, chop. Reserve the water.

  3. In a saute pan, melt butter and saute garlic, whisk in the flour vigorously until thickened, add 1/2 cup of the reserved liquid.

  4. Raise heat and whisk Heavy cream and 1/4 cup grated parmesan or romano cheese, add salt and pepper to taste and whisk thoroughly until thickened and just before serving

  5. Add the chopped steamed clams.

  6. Serve over 1 serving of pasta
