So good my daughter requested this for her special birthday dinner.

Recipe Ingredients for Clam Chowder

3 slices Bacon Maple
19 1/2 ounce minced clams
1 cup minced onion
1 cup diced celery
2 cups Potatoes, cubed
1 cup diced carrots
1/2 cup butter
3/4 cup all-purpose flour
32 ounce fat free half-and-half cream
2 tablespoons red wine vinegar
1 1/2 teaspoons salt
1 ground black pepper to taste

Recipe Directions for Clam Chowder

  1. Brown bacon in skillet and remove. Leave drippings in pan.

  2. Add onions, celery, potatoes and carrots. Drain juice from clams into the skillet over the veggies. Add water to cover, and cook over medium heat until tender.

  3. Meanwhile, in a large, heavy saucepan, melt the butter over medium heat. Whisk in flour until smooth. Whisk in cream and stir constantly until thick and smooth.

  4. Stir in vegetables and clam juice. Heat through, but do not boil.

  5. Stir in clams just before serving. If they cook too much they get tough. When clams are heated through, stir in vinegar, and season with salt and pepper.

  6. Crumble bacon over each bowl and serve.
