Recipe Ingredients for clam chowder

219 grams Onions
1 oz Bacon
3 stalk, medium (7-1/2" - 8" long) Celery
13 oz Minced Clams
8 oz ORLEANS Clam Juice
12 fl oz Organic Low Sodium Chicken Broth
2 tbsp Butter
22 grams Gold Medal All Purpose Flour
500 grams Potatoes, Russet, Flesh And Skin

Recipe Directions for clam chowder

  1. finely dice the onions (1 medium or 219 grams) and celery and sweat in the bacon fat (1-1/2 T)

  2. add the minced clams and their juice (I use two 6.5 oz. cans and their juice is almost 1-1/2 cups) PLUS 8 oz. bottle clam juice

  3. evenly dice the potatoes and add to the broth and cook until just tender

  4. add 1-3/4 cups chicken broth

  5. in a separate pot, make the roux with 2 T butter and 3 T flour, whisking constantly, add some of the liquid from the soup pot to the roux and then add it all back into the soup (be sure to cook the flour)
