Clam Chowder Recipe

My attempt at New England clam chowder.

Recipe Ingredients for clam chowder

4 medium slices bacon, diced
1 1/2 cups chopped onion
2 cloves of garlic, minced
2 stalks celery, finely minced
1 1/2 cups water (or less for a thicker soup)
8 oz. clam juice (from can of clams)
4 cups potatoes, peeled and cubed
1 1/2 teaspoons salt
1 ground black pepper to taste
2 tbsp. flour
3 cups 2% milk
3 tablespoons butter
20 ounce minced clams
1/4 teaspoon dried thyme
1/4 teaspoon dried savory
2 tsp. minced parsley

Recipe Directions for clam chowder

  1. Place diced bacon in large stock pot over medium-high heat.

  2. Cook until almost crisp; add onions, celery garlic, flour, and butter and cook 5 minutes into a roux.

  3. Stir in water and potatoes, and season with salt and pepper. Bring to a boil, and cook uncovered for 20-30 minutes, or until potatoes are fork tender.

  4. Add milk to soup.

  5. Stir clams and the clam liquid into the soup. Cook for about 5 minutes, or until heated through. Mix in spices, sprinkle with the parsley. Served best in a sourdough bread bowl.
