Recipe Ingredients for Clam Chowder

2 1/4 pounds chopped potatoes
2 cups chopped onion
32 ounces 1% milk
2 tablespoons Smart Balance 67% Buttery Spread
1/2 teaspoon salt

Recipe Directions for Clam Chowder

Chop potatoes and onion into 1/2" cubes. Saute onion in Smart Balance until soft and translucent. Add potatoes and barely cover w/water and juice from clams. Cook until done but not over done, can actually be a bit under done at this point. Remove 2c of the potato & onion mix and reserve. Add in milk and clams. Blend up reserved potatoes & onions until creamy, thin w/juice from pot then add back to pot and turn heat down on low. Keep and eye on it and stir regularly to keep from sticking to bottom of pan. Cook until flavors blend but be careful not to have the potatoes fall apart.
