Made with soy milk to up the protein and lower the cholesterol and fat. Soy milk makes it super creamy!

Recipe Ingredients for Clam Chowder

1 oz salt pork
1 medium onion
3 tbsp flour
1 tbsp fresh thyme
8 oz clam juice
12 oz minced clams
1 large potato
32 oz unsweetened soy milk

Recipe Directions for Clam Chowder

Render the salt pork over medium heat until crispy. Remove to a paper towel to drain. Add the chopped onion and saute until softened. Add the flour and stir constantly for 3 minutes. Add the chopped, peeled potato, thyme, clam juice, juice from canned clams and soy milk. Reduce heat to medium low and cook, stirring occasionally until potatoes are cooked through. Add drained clams and freshly ground black pepper to taste. Serve hot.
