Recipe Ingredients for Claire's Thai green curry

40 g green curry paste
300 g chicken breast
400 g potatoes
400 g coconut milk
200 g carrots

Recipe Directions for Claire's Thai green curry

  1. Boil curry paste and half of the coconut milk for 2 to 3 minutes

  2. Add the rest of the coconut milk and bring to the boil

  3. Add the diced chicken and reduce the heat to simmer

  4. Once the chicken has cooked, add the potatoes and carrots.

  5. Once the vegetables have cooked, serve with rice
