Traditional Middle Eastern salad. Serve on romaine lettuce leaf scoops.

Recipe Ingredients for Claire's Tabouli

1/4 cup bulgur wheat
1 cup tomato, chopped
1 cup cucumber, peeled, chopped
1/4 cup onion, chopped
1/4 cup parsley, minced
1/4 cup mint, minced
1/2 tsp salt
1/4 cup lemon juice
2 tbs olive oil

Recipe Directions for Claire's Tabouli

  1. Place the dry bulgur wheat in a bowl

  2. Pour 2 cups of boiling water over it and let sit for 15 minutes

  3. Drain well, pressing out all excess water

  4. Combine with all the other ingredients and mix well

  5. Chill for at least one hour before serving
