1 pound lamb
1/2 pound potatoes
1 pound carrots
1 onion
1 pound eggplant
2 tbs flour
2 tbs olive oil
3 cups chicken broth, low sodium
1/4 tsp salt
1/4 tsp pepper
1/4 tsp cinnamon
1/4 tsp thyme

Recipe Directions for Claire's Lamb Stew, Greek Style

  1. Combine the flour and spices. Toss the lamb cubes with this mixture until completely coated.

  2. Heat the olive oil in a heavy pot. Add the lamb and brown well on all sides

  3. Add all the other ingredients and simmer for 1 hour or until the lamb is very tender
