Recipe Ingredients for Claire's Indian Cucumber Salad

2 cups cucumber, peeled, chopped
3 tbs onion, minced fine
2 cloves garlic, minced fine
1/4 cup mint leaves
1 tsp mustard seed, black
1/4 tsp salt
6 ounces yogurt, plain, fat free

Recipe Directions for Claire's Indian Cucumber Salad

  1. Heat a small iron frying pan. When the pan is hot, put in the mustard seeds and cover the pan. Shake the pan for just a few seconds. The seeds will pop. Remove from the heat and let cool

  2. Chop the peeled cucumbers

  3. Chop the mint leaves

  4. Mince the onion and garlic

  5. Combine all the ingredients and chill before serving.
