Recipe Ingredients for Claire's Grilled Vegetables

2 peppers, sweet green and red
4 small zucchinis
2 tomatoes, halved
1 onion, sliced thick

Recipe Directions for Claire's Grilled Vegetables

  1. Seed the peppers and cut in quarters lengthwise

  2. cut the zucchinis in half lengthwise

  3. cut the tomatoes in half across

  4. slice the onion

  5. Place a lightly oiled cake cooking rack on top of the grill.

  6. Arrange the vegetables on the grid and grill over high heat, turning until the edges are beginning to brown and grill marks appear.

  7. Remove to a platter

  8. May be drizzled with your favorite salad dressing or served as is.
