Recipe Ingredients for clafoutis with vegetables and cheese

1/4 cup shallots
1/4 cup olive oil
3 oz zucchini
3 oz carrots
3 oz asparagus
3 oz fava beans
6 slices whole wheat bread
1 tsp paprika
1 tbsp flour
1/3 cup skim milk
1/3 cup half and half
2 eggs
5 oz brie cheese
1/2 cup parmesan cheese

Recipe Directions for clafoutis with vegetables and cheese

  1. Oven - 350.

  2. Saute shallot until softened. Add zucchini, carrots, asparagus, and fava beans - 5 min. Season with salt.

  3. Oil two baking sheets. Place bread on sheets and dh with paprika. Toast in oven until lightly browned. Remove and set aside.

  4. Mix flour and milk. Heat cream and eggs in a medium saucepan over medium heat, stirring constantly. Add milk and stir until thickens.

  5. Line base of baking dish with toast. Cover wtih Brie. Spoon veg over top. Pour sauce over top. Sprinkle with parm.

  6. Bake until browned - 20-25 min.
