Whole wheat muffins with apple and very little sugar.

Recipe Ingredients for CJ's whole wheat apple muffins

1 large fuji apple
1/2 cup unsweetened applesauce
2 tbsp unsalted butter
1 1/2 cups nonfat plain yogurt
2 cups whole wheat pastry flour
1 cup whole wheat flour
1 cup skim milk
2 tbsp skim milk
2/3 cups rolled oats
2 tbsp ground cinnamon
2 1/2 tbsp sugar
1 tbsp baking powder
1/2 tsp baking soda
2 large eggs

Recipe Directions for CJ's whole wheat apple muffins

  1. Soak 2/3 cups oats in 2/3 cups skim milk.

  2. Preheat oven to 375.

  3. Chop the apple into bite-sized pieces. Mix with cinnamon and 1/4 cup pastry flour.

  4. Whisk together remaining flour, baking soda, and baking powder.

  5. In an electric mixer, mix soaked oats, applesauce, butter, and sugar for about 2 minutes.

  6. Add the eggs one at a time, stirring well after each one.

  7. Add 1/2 the dry ingredients, mix.

  8. Add 1/2 cup yogurt, mix.

  9. Add 1/4 of the dry ingredients, mix.

  10. Add 1/2 cup yogurt, mix.

  11. Add remaining dry ingredients, mix.

  12. Add remaining yogurt, mix.

  13. Distribute among muffin cups.

  14. Bake for 30 minutes.
